Our approach to cask aged aquavit is strongly influenced by the fact that we are a whisky producer. We mature all components of the final blend in casks separately. Unlike some others, we also age our spice distillate. Our method is to let every component mature in its own time, and then blend different distillates and matured spirits of different character and age to something that we proudly claim is larger than the sum of its parts. The result is a cask-aged aquavit with high concentration and focus, distinct herbal notes, and a rich and beautifully balanced cask influence.

Our cask aged aquavit changes from blend to blend and batch to batch. However, there are some characteristics that are always there. Distinct aromas of caraway, spices and citrus. Casks notes of cocoa, oxidized fruit, walnut and tropical fruit. We’re quite geeky when it comes to texture, and our aim is to make our cask aged aquavits silky and chewy on the palate.

Caraway is a fascinating botanical with a broad fan of aromas. Backed by citrus and spices, this caraway-forward expression is both complex, savoury and fresh.

Aromas of caraway and citrus peel. Hints of angelica and herbs. Soft and rich mouthfeel with distinct caraway and citrus. Finishes with liquorice root, angelica and warm spices. Nuanced and complex, with a long aftertaste.

Dill is tricky to work with in distilling, as it very easily leans into green and minty aromas. We get around this by using copious amounts of caraway in our dill expressions as well, and we combine these with spices usually used in gin. We age our dill aquavit in American oak barrels previously used for bourbon.

Light straw colour. Mint, dill, anise drops, caraway and citrus on the nose, with pepper and vanilla towards the back. Soft and rich on the palate with caraway, dill, mint, and lemon peel. Long and quite floral finish with anise and cinnamon.

Feddie christmas aquavit consists of caraway and spice distillate matured in port, sherry and bourbon casks, blended with our organic spirits matured in sherry and bourbon casks. A large proportion is matured in the fortified wine barrels, which gives the golden amber color of this year's christmas aquavit. As if that wasn't christmasy enough, we have added an extract of figs and dates and 2,5 grams of organic cane sugar per liter to give the aquavit the christmas touch we wanted. Here it smells rich of spices and christmas cookies!
